Chocolate Lava Cake

Chocolate Lava Cake is something that had become very popular at many restaurants. But I have not found one as rich and decadent as this one!

Chocolate Lava Cake

Ingredients

  •  8 ounces semisweet chocolate 
  • 2 sticks (16 tablespoons) unsalted butter
  • 5 egg yolks
  • 4 whole eggs
  • 3/4 cup sugar 
  • 1/3 cup flour 

Instructions

  1. Preheat oven to 375 degrees. 
  2. Lightly butter six 3/4 cup ramekins. Lightly dust with sugar and dump out excess.
  3. In a blow set over a pot of simmering water, melt chocolate and butter. Once melted and smooth, remove from heat and set aside to cool for 10-15 minutes.
  4. In a large bowl, beat egg yolks and whole eggs. 
  5. Add in sugar and continue beating until the mixture is thickened and lighter in color. 
  6. Stir in melted chocolate and butter.
  7. Sift in flour and gently fold to combine.
  8. Divide batter among the 6 ramekins, about 3/4 full.
  9. Bake for 30-40 minutes until the edges of the cake are set but the center is still jiggly when shaken.   
  10. Immediately run a knife around the edge of the cake and flip onto your serving dish. 

RECIPE TIP: Do not overtake these! If you do, you won't have lava cake. You'll just have cake.

If you don't have ramekins you can use muffin tin. This method will make 12 cakes. Follow all the same steps but these will bake for about 15 minutes.
