Crystal Palace Breakfast Lasagna

The Crystal Palace Breakfast Lasagne recipe has become a very special recipe to our family. It was one of the first Disney recipes we made at home. Many years ago we served the Crystal Palace Breakfast Lasagna for breakfast on Easter and it soon became a staple of Easter breakfast that turned into Easter Bruch at our house. Our extended family and friends looked forward to it every year!

We had found the recipe on another Disney recipe site. It tasted great and was just like the one we had in the park back at the turn of the century. (Wow! that sounds like such a long time ago!) We’ve been making the same recipe for nearly 20 years…until now. 

In August of 2019, on our 20th Anniversary trip of going to Disney World, we had breakfast at The Crystal Palace, which was THE first restaurant we ever dined at in Disney. I have to say, it was a very emotional morning, even for my 24-year-old son, who is never sentimental.

One thing we realized right away was that the Breakfast Lasagne did not look or taste quite the same as we remembered. We spoke to the waiter who gave us this official recipe from The Crystal Palace and it was pretty different. 

The next Easter (2020), we tried this new recipe, which is posted here. It was just like the new version, except the one set out on the buffet when we took this photo, did not have the brown sugar caramelized as it states in the instructions. (The previous tray did so perhaps the kitchen was rushing to put out fresh food).

Overall, I am personally a fan of the original Crystal Palace Breakfast Lasagne, but that could be nostalgia talking. I think this one is denser with a consistency more like a bread pudding. And although it has a brûléed top, (and who doesn’t love carmelized sugar), I still prefer the original recipe. I’d love to hear what you think!

Crystal Palace Breakfast Lasagna

Ingredients

Pastry cream
  • ½ teaspoons vanilla extract
  • 6 egg yolks
  • 1 ½ cups milk
  • ¼ teaspoon salt
  • ¼ cup flour
  • ¾ cups sugar
Custard
  • 6 whole eggs
  • 1 ½ pints heavy cream
  • 1 pint half & half
  • 1 ounce brandy
  • ¼ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • 1 ½ cup sugar
Extras
    • 8 waffles, frozen or homemade
    • 8 pancakes, frozen or homemade
    • 6 cups crumbled pound cake (I used the pound cake recipe from the Hoop Dee Doo Review’s Strawberry Shortcake or you can buy poundcake if you want to save time)
    • 1 cup frozen raspberries
    • 1 cup frozen blueberries
    • 4 bananas, sliced
    • 1 tablespoon butter
    • ¼ cup brown sugar
    • ½ pint (1 cup) fresh berries

Instructions

Pastry cream
  1. In 2 quart saucepan, combine sugar, flour, salt, and milk.
  2. Cook, stirring constantly, over medium heat.
  3. In a small bowl, beat egg yolks a little bit.
  4. Temper the egg yolks be drizzling about a cup of the hot milk mixture while whisking. We do this so we don’t make scrambled eggs when adding the eggs to the hot milk because that’s gross.
  5. Add warm egg yolk mixture to the rest of the milk mixture. Stir constantly over medium low heat until beautifully thick. Be carefully because the bottom will scorch very easily!
  6. Remove from the heat and stir in vanilla extract.
  7. Gently press plastic wrap directly onto top of the pastry cream to avoid an icky skin.
  8. Chill in the refrigerate until ready to use. This can be done the day before.
Custard
  1. Beat eggs in a large bowl.
  2. Whisk in the rest of the ingredients.
  3. Cover and refrigerate until ready to use. This can be done the day before.
Assembly
  1. Single layer of waffles in a buttered casserole dish.
  2. Sprinkle ¼ of the pound cake over the waffles.
  3. Layer 1 ½ bananas, ½ cup frozen raspberries, ½ cup frozen blueberries over the pound cake.
  4. Sprinkle ½ the remaining pound cake over the fruit.
  5. Layer 1 ½ bananas, ½ cup frozen raspberries, ½ cup frozen blueberries over the pound cake.
  6. Lay pancakes over the fruit
  7. Sprinkle the rest of the pound cake
  8. Firmly press down to pack the layers
  9. Slowly pour over custard and let it sit for 20 minutes until all the custard is soaked in and saturated.

Baking and garnish
  1. Preheat the oven to 350 degrees.
  2. Bake the lasagna for 1 hour until the center reaches 165 degrees.
  3. Remove from the oven and spread the pastry cream over the top of the cooked lasagna.
  4. Lay 1 sliced banana on top of the pastry cream.
  5. Sprinkle brown sugar over the pastry cream and banana.
  6. Place dish under the broiler for a few minutes until the sugar caramelizes. Do not walk away, this can burn so fast!
  7. Allow to cool and set for a few minutes. Top with fresh berries and serve.

CRYSTAL PALACE BREAKFAST LASAGNA RECIPE TIP:
If you have a kitchen torch, you can use this to brûlée the top layer. It's easier to control than the broiler.
