Parmesan Mashed Potatoes

Chef Mickey’s Parmesan Mashed Potatoes is a throwback to years ago. This is a restaurant we went to every year when the kids were small. It is one of the top 3 most popular in all of Disney World.

My fondness for Chef Mickey’s is more about nostalgia than the food. As I say to many of my travel clients, there are some Disney restaurants you go for the food, others you go for the experience. This is one that is a lot of fun, plus you get to meet and great Mickey and his friends. 

These parmesan mashed potatoes are a nice switch up from ordinary mashed potatoes. The parmesan flavor is mild enough that kids love too. I feel they are a little soft and thin, but another reason why kids may like them.

Parmesan Mashed Potatoes

Ingredients

  • 3 pounds potatoes
  • 2 cups half & half 
  • 4 teaspoons unsalted butter
  • 3/4 cup parmesan cheese, freshly grated 
  • Salt and pepper to taste 

Instructions

  1. Peel and cut potatoes into 1 inch cubes.
  2. Cover the potatoes with cold water and add in a good amount of salt, about 4 tablespoons should do. 
  3. Bring the pot to a boil and boil for 15-20 minutes, until the potatoes are easily pierced with a fork. Drain and return potatoes to the pot (to allow excess water to evaporate) for a couple of minutes.
  4. Heat half & half in a small saucepan over medium-low heat until it just started to steam. Pour over the potatoes. 
  5. Using a potato masher, mash the potatoes until smooth. 
  6. Mix in the cheese, salt and pepper. Serve.

CHEF MICKEY'S PARMESAN MASHED POTATOES RECIPE TIP:

We heavily salt the water that the potatoes boil in because this uses osmosis to season the potatoes from the inside out. This helps to get a better flavor, rather than saltiness if we only added salt at the end.

I recommend not using an electric mixer, whisk, or food processor because it over mixes the potatoes and makes the tough and gummy, and that's not what mashed potatoes are about.
