Coral Reef Pineapple Chutney Recipe
The Coral Reef Pineapple Chutney recipe is one of my go-to recipes for transforming an everyday dish into a tropical treat.
Especially when my kids were younger, we spent a lot of time in The Seas. They loved watching all the fish in the giant aquarium. Plus it is a great place in Epcot to go when it’s raining or you just to get out of the heat for a bit.
With the giant glass windows looking into the aquarium, dining in Coral Reef was a great way to keep them entertained through dinner. (iPads didn’t exist back then).
Coral Reef was actually our first table-service restaurant experience in Epcot. Although the pineapple chutney recipe has not been on the menu for a while, it’s still one of my favorites. This chutney is sweet with a hint of heat. It is really great over fish, or chicken, but I think my favorite is on a fish taco.

Coral Reef Pineapple Chutney Recipe
Ingredients
- 1 1/2 tablespoons olive oil
- 2 1/2 cups fresh pineapple, finely diced
- 1/2 tablespoon red crushed pepper
- 2 tablespoons brown sugar
- 1/4 cup red wine vinegar
- 3/4 cup fresh red bell pepper, diced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Heat oil in a pan over medium-high heat and sauté pineapple.
- Add crushed red pepper, brown sugar, and vinegar to pan. Cook until
almost all the liquid has evaporated. - Mix in bell pepper and parsley.
- Season with salt and pepper.
- Enjoy hot or cold.
