Carrot Ginger Soup

Boma restaurant at Disney’s Animal Kingdom Lodge is one of the Disney buffets we’ve visit nearly every trip to Disney World. One of the reasons kept going back was for their carrot ginger soup.

On one particular visit, I was very disappointed when they did not have the Carrot Ginger Soup on the menu. The Cast Member told me that they alternate that soup with the butternut squash soup. That is also a very delicious but not when I had been craving for months.

Not long after, the cast member brought me a bowl of carrot ginger soup to my table. She told the chef how much I loved it so he made me a fresh bow. Now that was a magical moment! It just goes to show what makes Disney so special.

This is a very rich and creamy soup. The fresh carrots give it a hint of sweetness that is wonderful for spring. It’s one of the items we serve each year for our family Easter Brunch.

Boma Carrot Ginger Soup

Ingredients

  • 1/3 cup flour
  • 4 tablespoons sugar
  • 1 pound carrots, cut in chunks
  • 2 cups water 
  • 2 cups heavy cream 
  • 1 cup milk 
  • 2 slices American cheese
  • 1 ½ tablespoons grated fresh ginger
  • ¼ cup sugar, adjust as needed 
  • Salt and pepper, to taste

Instructions

  1. Make roux by melting butter in a medium saucepan. Add in flour, stirring constantly for 1 minute to cook out the flavor of raw flour.
  2. Remove the roux from the pot and set aside.
  3. To the now empty pot, add carrots, water, ginger, and about half of the sugar. Simmer until carrots are soft.
  4. Carefully puree the carrot mixture using a blender or immersion blender until very smooth.
  5. Return to pot and stir in milk, heavy cream, and roux. Cook over medium low heat until soup is hot and slightly thickened.
  6. Add in cheese and stir until melted.
  7. Adjust seasoning with salt, pepper, and sugar.

RECIPE TIP: Fresh ginger works best in this recipe. If you have extra, peal it and freeze it. it stores well.
