Recipe From Boma At Disney's Animal Kingdom Lodge

Boma Durban Chicken

Although it has a lot of seasonings in the mix, Boma’s Durban Chicken it’s just enough to make it something different than the traditional roasted chicken. This chicken is not too spicy and makes a great family dinner, but you’ll need to start the day before because it needs to marinate overnight. This is what makes it so tender and juicy! 

We like many of the dishes from Boma and often make them at home. If you are not very adventerous with your the Carrot Ginger Soup and Banana Bread Pudding are mild recipes that appeal to nearly everyone.

Boma Durban Chicken

Ingredients

  • 3 pounds chicken pieces
  • 3 tablespoons olive oil
  • 1 small grated onion
  • 3 tablespoons grated garlic
  • 3 tablespoons grated ginger
  • 2 tablespoons lemon juice
  • 1/3 cup plus 2 tablespoons plain yogurt
  • 6 tablespoons Durban Spice Mix (recipe below)
Durban spice mix:
    • 2 tablespoons plus ¾ teaspoon ground coriander
    • 1 ½ tablespoons paprika
    • 1 ½ tablespoons ground annatto seeds
    • 1 ½ tablespoons salt
    • ¾ tablespoon ground cumin
    • ¾ tablespoon ground turmeric
    • ¾ tablespoon pepper
    • ¾ teaspoon ground cinnamon
    • ¾ teaspoon ground nutmeg
    • ¾ teaspoon ground cloves

Instructions

  1. Combine all ingredients of Durban Spice Mix. Set aside. (We are going to use 6 tablespoons of this mix so store the rest in an airtight container.)
  2. In a large bowl combine the spice mix, olive oil, onion, garlic, ginger, lemon juice, and yogurt.
  3. Pat chicken dry and add to bowl. Mix well.
  4. Cover and marinade for 24 hours.
  5. Preheat oven to 325 degrees.
  6. Spread chicken pieces out on baking sheet.
  7. Bake for 45-60 minutes.

RECIPE TIP: The Durban Spice mix recipe makes more than you will need for this amount of chicken. Store the rest in an airtight container. Or, use it all to make a larger batch. It's great to serve at a party.
