Prime Time Cafe Meatloaf

50s Prime Time Cafe is one of my family’s favorite Disney restaurants. Altough they serve amazing fried chicken and other homestyle entrees, the Prime Time Cafe Meatloaf recipe is probably my favorite item on the menu. 

Every family has their own meatloaf recipe. Although my son makes the best meatloaf in ours, we make this Prime Time Cafe Meatloaf recipe when we want a change from our regular meatloaf or when he’s not around. The glaze on this meatloaf adds just the right amount of zing. It’s a really nice change of pace from our usual recipe. Serve it with the Ohana Green Beans and you have a wonderful weeknight meal.

Besides serving up good homestyle cooking, the Prime Time staff makes it a lot of fun to dine there. It’s a place where everyone is family. I remember one waitress putting green beans on my son’s fork and trying to get him eat them. Another time, the waitress made sure my daughter set the table for dinner. But everyone’s favorite part of the meal was always ordering dessert from the Viewfinder menu.

Prime Time Cafe Meatloaf

Ingredients

  • 2 lb ground beef
  • 1 lb ground pork
  • 4 eggs
  • 1 cup seasoned bread crumbs
  • 1/2 cup diced onions
  • 1/4 cup diced green peppers
  • 1/4 cup diced red peppers
  • 2 Tbsp worcestershire sauce
  • Cracked black pepper to taste
  • Kosher salt to taste
  • 1/2 cup Meatloaf Glaze (recipe below)

Instructions

  1. Preheat oven to 350 degrees.
  2. Dice peppers and onions and set aside.
  3. Combine meats and seasonings. Add the vegetables and mix to combine.
  4. Place meat mixture in an oiled loaf pan.
  5. Bake for 1 hour (internal temp 155º).
  6. Brush meatloaf with meatloaf glaze. Bake another 10 minutes.
  7. Let meatloaf set for 10 minutes, slice, and serve.

Meatloaf Glaze

Ingredients

  • 1/2 cup ketchup
  • 1 Tbsp brown sugar
  • 1 Tsp Dijon mustard
  • 1/2 Tsp worcestershire sauce

Instructions

  1. Combine all ingredients until mixture is smooth.

RECIPE TIP: Double the recipe to make 2 meatloafs. Freeze one and take out on a night you don't feel like cooking.
